🍀🔥 Lucky FireBall Chocolate  Cupcakes: 🍫🧁Chockolate Luckycharm Fireball Cupcakes

Ingredients:

For the Cupcakes:

  • 1/4 cup Fireball
  • 1 cup unsalted butter
  • 3/4 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 2 large eggs
  • 2/3 cup sour cream

For the Irish Cream Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup Irish cream liqueur (e.g., Baileys)
  • 1 teaspoon vanilla extract
  • Dash of green dye
  • Lucky Charms to decorate
  • Dash of Fireball

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C).
    • Line cupcake tins with paper liners.
  2. Prepare the Cupcake Batter:

    • In a saucepan, heat the Fireball and butter over medium heat until the butter is melted.
    • Whisk in the cocoa powder until the mixture is smooth.
    • Remove from heat and let it cool.
  3. Combine Dry Ingredients:

    • In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt.
  4. Mix Wet and Dry Ingredients:

    • In a separate bowl, beat the eggs and sour cream together.
    • Add the Fireball mixture and mix until well combined.
    • Gradually add the wet ingredients to the dry ingredients, mixing until the batter is smooth.
  5. Fill Cupcake Liners:

    • Pour the batter into the prepared cupcake liners, filling each about two-thirds full.
  6. Bake:

    • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
    • Allow the cupcakes to cool completely.
  7. Prepare the Frosting:

    • In a mixing bowl, beat the softened butter until creamy.
    • Gradually add the powdered sugar, Irish cream liqueur, dash of fireball to taste and vanilla extract. Beat until smooth and fluffy.
  8. Frost the Cupcakes:

    • Once the cupcakes are completely cool, frost them with the Irish-Fireball Cream frosting. 
    • Add a few sprinkles of Lucky Charms for fun
